Cobalt chloride strips can be purchased from several biological and chemical supph companies. Alternatively, the strips can be made by soaking filter paper in 5 cobalt chloride solution (5 g cobalt chloridc in distilled water total volume of solution 100 ml). You must always chill blanched vegetables before drying them, to be certain the cooking process has stopped. After removing the vegetables from the blancher, immerse the colander or steamer rack full of vegetables in a sink full of ice water or a dishpan full of ice water.
