1. Place desired herb or herbs in the double boiler or Crock-Pot. (If you re using roots, chop and infuse them in the oil for at least

1 hours before adding leaves or flowers.)

  1. Pour in enough extra-virgin olive oil to cover the herbs with I to 2 inches ol oil
  2. Cently heat the herbs at about 180°F for

2 to 4 hours. Keep the pot or boiler covered, and stir occasionally.

  1. Remove from heat and let the oil cool.
  2. Strain the oil through a fine-mesh strainer lined with cotton muslin,
  3. Squeeze out any excess oil remaining in the muslin.
  4. Pour the oil into sterilized glass jars to store.
