Moisture influences both nutrient uptake and the innate qualities of the Brassica product after harvest. Moisture stress increases the thickness of cell walls, relative dry weight and deposition of lignin, suberin and cellulose, resulting in a fibrous or woody texture. Fibrousness is unacceptable to the retail consumer in fresh vegetables, especially those purchased for their leaves, flowers or root and hypocotyl organs, as is the case with most Brassica crops. Quality decreases following erratic irrigation regimes that fail to sustain continuous development and impose stresses at all crop growth stages; these becomes critical as maturity approaches.
